Firstly we use one of our happy skilled chocolatiers.

Tempering the Chocolate

The Artisan chocolatier first tempers the chocolate. This is the processing of working the warm brown molten liquid correctly to ensure the finished product has the correct mouth feel and glossy finish.

Make the filling

Next the chocolatier decides what type of chocolates they are going to make ..truffles, pralines, caramels, fudges or crèmes.

We can't give away our recipes but our Whisky Truffles are made with chocolate, cream and a generous splash of Scotch Whisky.

Our Champagne Truffles were reviewed by Easy Magazine who described them as "Absolutely delicious"

Select the chocolate mould

The chocolatier selects a chocolate mould. We can create lots of different chocolate shapes. The chocolate mold cavaties are filled with tempered chocolate and then upturned and gently tapped. The excess chocolate is scraped off and the chocolate shells are left to harden.

Pipe the chocolate centre

The soft truffle mixture is then piped into the molded chocolate cavaties and filled just over ¾'s full, these filled chocolates are set aside for a few minutes to allow the filling to settle.

The last layer of chocolate

We're now ready to add the last layer of chocolate. Milk chocolate is ladled across the top of the mould to fully fill the cavaties. The excess chocolate is scraped off with a pallet knife. The filled chocolate moulds are left in a cool area for the chocolate to harden.

Demould the chocolates

When the chocolates are ready it's time to upturn the moulds and set the chocolates free. A perfect chocolate should just fall out of the mould. The chocolates should be shiny and glossy.

The chocolates are then sent to our packing room where luxury chocolate assortments are lovingly packaged in brightly coloured chocolate boxes and finished off with hand tied ribbons.
